Founded in 1987, the Agnès and Didier Dauvissat estate is located in Beine near Chablis. All of the estate's plots have been planted by them, with Chardonnay in soils composed of clay-limestone marl and small fossilised oysters (Kimmeridgian). Along with an optimal exposure to the sun, these provide the wines of Chablis with its unique aromas. Their 10 ha vineyard includes three appellations: Petit Chablis, Chablis and Chablis Premier Cru "Beauroy", and they produce typical wines whilst respecting the environment and their terroir.

Certified Organic, Domaine des Mapliers Rosé is cultivated with total respect of nature. The vines, situated on a south-facing hillside, grow on a calcareous clay soil at an altitude of 300 metres above sea level, which accounts for the wine’s unique freshness. Domaine des Mapliers is owned by Jean Gallo, who with his son has been passionate about wine and Champagne for over 40 years. In 2013 they decided to acquire a vineyard and live out their passion for the land and its wine. Previously managed by the celebrated Domaine Ott, the vineyard is located in the heart of Provence Varoise.

Champagne Ayala

Champagne Ayala is one of the original Grand Marque Champagne houses, founded by Edmond de Ayala in 1860 and based in Aÿ. The young House has been a key reference, pioneering a drier style of Champagne and was one of the founding members of the Syndicat des Grandes Marques in 1882, today called the Union des Maisons de Champagne. The house was acquired by the Bollinger family in 2005, and has continued to benefit from much investment and improvement. It consistently stands out for its purity of style which expresses the elegance of Chardonnay.

Today, the négociant operates in a newly built, modern winery with thermo-regulated stainless steel vats, underground chalk cellars and 40 gyropalettes. Les Roches Blanches uses the traditional Champagne method and the wines are matured for two years in chalk cellars in Dizy.

The Cave de Pomérols was founded in 1932, and since merging with the Cave of Castelnau de Guers in 2003 and the Cave of Mèze in 2007, the subsequently extended vineyards of the Vins de la Famille de Beauvignac are spread over 1800 hectares, 400 of which are classified AOP Picpoul de Pinet. At present they contract around 350 winegrowers who all have the knowledge and experience to produce 120.000 hectolitres on average. Production is 57% white, 21% rosé and 22% red.
