INTRODUCTION
The area around San Paolo has been shaped by ice ages, rivers and erosion. More than 20.000 years ago, the Atesino Glacier carried mineral moraine debris from the nearby western and northern Alps to the Oltradige plateau. This Sauvignon’s name, ‘Schliff’, refers to the remaining glaciation sediment and the mineral soils around the Gfill area. Produced by a short maceration in the press followed by a controlled fermentation in stainless steel. 9 months ageing on the fine lees.
TASTING NOTES
Elderflower, mango, gooseberry, grapefruit and delicate herbal aromas harmoniously combine with a touch of flint. Juicy, fine and mineral on the palate with a persistent finish. Will continue to develop and improve for up to 10 years.
