INTRODUCTION

The Deep Woods Estate Hillside Cabernet Sauvignon is a unique expression of the Margaret River wine region – one of the best Cabernet producing areas in the world. The fruit for this wine is sourced largely from the younger and grafted vineyards on the original Deepwoods vineyards in Yallingup. These vines are just coming of age and showing great intensity and verve. The wine is simply made 10-14 days of skin contact during fermentation prior to pressing directly to barrel for around 12 months maturation. 15 % new French oak.

TASTING NOTES

Deep crimson with vivid purple hues, this wine exhibits aromas of violets, black cherry, and dried herbs with hints of spice. The palate displays flavours of summer plums and dark berries, with notes of sweet spice and dark chocolate from the use of both new and seasoned French oak. It is medium-bodied with fine, elegant tannin and persistent length. A true representation of Margaret River Cabernet Sauvignon.
