A wonderful long maturing red wine, high expression of the tradition in Montalcinos wines productions. The grapes, 100% Sangiovese Grosso, are grown on the south facing slopes of the hills of Castelnuovo dell’Abate in Montalcino near Siena. Fermentation on the skins takes place in steel vats for 20 days at 24-28° C with daily pumping over. After the fermentation a further 2 days of maceration takes place before the wine is transferred into French oak barriques and large Slovakian oak barrels. During the first 5 months the wine receives batonnage on a weekly basis before it is left to rest for 20 months.
It has an intense ruby color with burgundy hue and concentrated scent, enveloping, ethereal with hints of black cherry, wild berry and vanilla. The taste is intense and slightly tannic due to the wine’s youth. Best served at 18°C in large glasses. Perfect with roasts, white or red meat, poultry, game and aged cheeses.
