The Vino Nobile di Montepulciano Riserva of Fattoria del Cerro has an intense and concentrated ruby red color. The grapes, 100% Prugnolo Gentile (a Sangiovese clone), are grown in the hills of Acquavivia di Montepulciano near Siena. Only the best grapes are selected from the parcels with the best aspect given the seasons weather conditions. Fermentation on the skins occurs in steel vats over 15-18 days at temperature between 24-28° C. After fermentation a further 2 days of maceration take place at 29° C. The wine then matures in barriques of French oak for 5 months with regular batonnage and then a further 7 at rest. Lastly, the wine is aged a further 6 months in large Slovakian oak barrels.
The ample aroma profile is characterized by hints of wild black cherry, violets and mild spices. Its flavor is full and persistent soft but clearly present tannins. The relatively high acidity complements the strong overall structure of this wine. Best served in large glasses at 18°C. Excellent with roasted or grilled red meat, game and aged cheeses.
