The most classic and the most famous among the wines by Fattoria del Cerro. It is produced from vineyards in Argiano in the heart of the Vino Nobile region using 100% Prugnolo Gentile (a Sangiovese clone). It has a vivid ruby red color and good concentration. Fermentation occurs in steel vats for 12-15 days at temperatures of 24-28° C with daily pumping over and delastage. After fermentation the Vino Nobile is matured in French and Slovakian barrels for 12 months.
Intense fragrant aromas with strong fruity notes including wild black cherry, violets and vanilla. An intense flavor profile is balanced with noticeable but mature tannins. Best served in a medium size glass; perfect with antipasti, with tomato based pasta dishes or grilled red meats.
