100% Lambrusco Grasparossa di Castelvetro DOP, made with grapes from a single vineyard of 12.5 hectares of the Generale Cialdini Estate located in the south east area of the rolling hills of the village of Castelvetro. Grapes are manually harvested and rigorously selected. A soft pressing with maceration for 48 hours at 10-12°C precedes a long “prise de mousse” in “cuve close” at a low temperature.
A ruby red colour, intense froth, and a full, round body combine with lovely blackberry and raspberry fruit notes on the palate. It is delectable with pasta dishes as well as roasted meats.
