100% organic Grasparossa grapes are carefully selected only from Cleto Chiarli’s Belvedere Estate, in which around 3 hectares are dedicated to organic production. These organic grapes are then vinified into a low-alcohol sparkling wine. Traditional Grasparossa pressing practice followed by a 36-hour cold macertation precedes fermentation in “cuve close” at 18-20°C.
Its ruby red colour is enhanced by the scent of fresh red fruits typical of Grasparossa grapes. It has a delicate and aromatic taste with a bright, violet froth and goes perfectly with pasta dishes, cured meats, and mature cheeses.
