Made from 100% Lambrusco of Sorbara, carefully hand-picked in the Chiarli’s Sozzigalli Estate. Here Sorbara grapes grow in their ideal area, which used to represent the riverbed of Secchia River. For this reason the soil is mostly made of sand and silt that provide this unusual grape with a very high acidity and low natural sugar level compared to all other Lambrusco grapes. Grapes are manually harvested and rigorously selected. A soft pressing with light maceration for 24 hours at 10-12°C precedes a final fermentation and “prise de mousse” in the bottle followed by an ageing of 6 months.
Its clear, red colour and intense, fruity nose give it an elegance and dry taste reminiscent of a Lambrusco of past times. This is a wine targeted at consumers who can appreciate the characteristics of the natural fermentation in bottle. It pairs perfectly with starters and savoury dishes.
