The grapes selected for the production of this prestigious wine come from the sunny vineyards that surround the Sabiona monastery, known as the “Acropolis of Tyrol”. The severe selection, the controlled production and the delicate ageing in acacia wood casks provide this wine with unmistakable character. Delicate crushing after a short period of contact with the skins, followed by temperature-controlled fermentation carried out in large acacia wood barrels for half the fermentation, then continued in stainless steel tanks. While it does not undergo malolactic fermentation, it rests on its fine lees for a period of 7 months.
Yellow with greenish hues to pale yellow in colour. On the nose fruity with scents of peach and green apple, marked elegance, mineral notes. On the palate robust, with markedly vivacious acidulous notes, persistent finish.
